Un queso para deleitarse en año nuevo
2009-12-30 - Quesos con flora roja superficial. Existes varios ejemplares dentro de esta familia de quesos, en su mayoría de origen francés, los que se caracterizan principalmente por el desarrollo de una corteza color pardo-rojizo, una textura de blanda a semi-blanda y un desarrollo aromático intenso.
El aspecto y color de la superficie es producido por la bacteria brevibacterium linens, durante un período de maduración de cuatro semanas aproximadamente como mínimo. Dicha bacteria es inoculada en el queso luego de su elaboración y durante su maduración, tradicionalmente frotando su superficie con un paño embebido en una salmuera tibia todos los días. Las enzimas producidas por este microorganismo se difunden al interior del queso causando cambios (proteólisis y lipólisis) asociados a la maduración, que progresan desde la superficie hacia el centro, por ello este tipo de quesos son de tamaño relativamente pequeño y de forma aplanada. La proteólisis y lipólisis (degradación, transformación de proteínas y grasas) producen amoníaco, ácidos grasos y otros compuestos orgánicos volátiles responsables de su olor y aroma intensos característicos. Si bien estos quesos tienen "una nariz" muy intensa y agresiva por la combinación aromática, hasta a veces pueden resultar desagradables en nariz, en boca su sabor es intenso pero no tan agresivo, suelen presentar un aroma a manteca muy marcado, a frutos secos (nuez) y cuando tienen mayor maduración son más especiados. Son picantes, de larga persistencia olfato gustativa y tienen una alta cremosidad y untuosidad, muy característica por el alto tenor graso que poseen (45 % de materia grasa sobre el extracto seco como mínimo).
El único de esta familia fabricado en Argentina es el Reblochón, quizás el más conocido del grupo a nivel mundial. Originario de la región francesa de Saboya y con denominación de origen, de leche de vaca cruda y en general con más de 50% de materia grasa, lo que le confiere una gran cremosidad. La corteza es de color rosa pálido a amarillento, la pasta tiene agujeros pequeños bien distribuidos y su flavor es intenso. También se fabrica este queso en Suiza occidental y en los Alpes italianos, solo que se le da el nombre de Reblosson.
Como ejemplo de quesos con flora "roja" o superficial se encuentra también el Queso Trapense, hoy en día con más de diez variantes. Los monjes de la abadía de Notre-Dame de Port du Salut, cerca de Entrammes, comenzaron a elaborar después de la Revolución Francesa un queso que rápidamente se hizo famoso fuera del monasterio como Port Salut. Existiendo otras variantes en diferentes regiones francesas como el Saint Paulin, Saint Marcellin, Nantais o el Vacherin de Mont d`Or. También están los trapenses de Austria, Alemania, Italia, Holanda entre otros.
En algunos quesos, la superficie es tratada no solo con la bacteria nombrada sino también con mohos y otro tipo de bacterias, desarrollando un aroma más intenso y complejo aún como el Limburger, el Romadur y el Munster (de Alsacia) ó Munster-Gerome entre los más conocidos.
Dado que en Argentina se consumen tradicionalmente quesos de menor intensidad y desarrollo aromático, es recomendable acompañar el Reblochón o cualquiera de la familia, con higos, jaleas de vino, frutas secas, arrope, panes ....entre otros, además ofrece amplias alternativas al experimentar su maridaje con vinos, siendo los dulces de cosecha tardía una alternativa.
